Yellowfin Tuna - キハダマグロ
Along with the Marlin, we were able to catch a small Yellowfin tuna. We brought the fish to a new Sushi shop near the Hacienda Dock in Cabo. They arranged five different sushi and sashimi dishes for us. They were all so good.

Fruit Basket & Succotash
What I like to do at MyD's house is, cooking. Cooking something different. I like to experiment with different recipes.
料理をたっぷりと時間を掛けて楽しみながら作れるっていいですよね。そんなことをできるのは、休暇中ならではのこと。

This was my first challenge to make a fruit basket. I made this as a welcome basket for Sandy, a 10-year -old Taiwanese girl who was also visiting.
MyD宅で作った初めてのフルーツバスケット。作れるもんですね。可愛くできました。10歳の台湾人の女の子が来るのでその子へのウエルカムバスケットにしました。

This is a recipe using lima beans and corn. Combined they are called Succotash. This recipe is called "Scallops with Succotash and Parsley Drizzle." It was very tasty.
リマビーンと言う豆ととうもろこしの料理でサコタッシュと呼ばれるアメリカ南部の料理だそうです。にんにく風味がよく効いて美味しかった。リマビーンとは、見た目は大豆と似ているようですが、味はぜんぜん違いました。

Yogurt Pom Pom
I made an apple cake, called Yogurt Pom Pom. This is the best apple cake I ever had in my life.The burnt area is so tasty in particular. I tried several times. I tried to add almond powder. I reduced the amount of sugar. I decorated the top with apple. However, following the original recipe is the best. I could not find the proper apple for this cake.
If I use the proper one, it should be even tastier.
これはすごく美味しい。特にこげたところが美味しい。お砂糖の量を変えたりりんごで飾ったり、アーモンドパウダーを使ったりしたけど、オリジナルに沿って作るのが一番美味しかったです。

Spaghetti Squash with Halibut Saurce ハリバットソースのそうめんカボチャ
I recently had a very interesting and rare dish while in the U.S. It is called spaghetti with halibut sauce. Instead of using regular spaghetti, we used spaghetti squash. This squash has so much fiber that, after steaming, it can be shredded with a fork and will look like spaghetti.米国に滞在中とっても変わった面白い食べ物に出会った。ハリバットソーススパゲティだ。本当のスパゲティでなく、スパゲティスクウォッシュと呼ばれるそうめんカボチャがスパゲティとして使われたものだ。このカボチャは繊維が多く、蒸してフォークで捌くとスパゲティのように見えます。
I do not think I have seen this kind of squash in Japan. This is a spaghetti squash.
私自身こんなカボチャは日本では見たことがない。これがそうめんボチャ。

Not Pumpkins - バンプキンじゃない?
Sometimes, people encounter a taste that is unforgettable. For me, at this moment, it is baked squash with butter and brown sugar. It was served by MyD's son-in-law. I wanted to find the squash and prepare it myself. At a supermarket in Orange county, California, I looked for squash and was able to find them. However, there were many different kinds of squash. I have never seen these kinds before in Japan. The shape looked like pumpkins. Still, they were called squash. According to a web-site, pumpkins are a kind of squash. The one I would like to find is called "Acorn Squash". I could not figure out which one was Acorn Squash.

時々忘れられない味に出会うことがある。今現在、私にとって忘れられないのは、バターとブラウンシュガーをかけてオーブンで焼いたスクオッシュと呼ばれるもの。MyDの義理の息子が準備してくれたものだ。自分でも焼いてみたいとスーパーでスクオッシュとやらを探したら見つかった。でもいろんな形をしている。今まで日本では見たことがないものだ。形はかぼちゃに似ているが、スクオッシュと呼ばれる。ウエブサイトを繰って見ると、かぼちゃとはスクオッシュの種類とのこと。必要なスクオッシュはエイコーンスクオッシュだが、一体どれがエイコーンスクオッシュか判らない。
Fortunately, a web-site showed a photo of Acorn Squash. Next time I am in the U.S., I would like to find this squash and try to bake it with butter and brown sugar. Baking time is an hour and half.

Therefore, it was hard to imagine squash refers to a group of pumpkins. There are many different types of squash. Most are good to eat and a healthy vegetable. Pumpkin in the U.S. refers to the one to creat a Jack-O'-Lantern, rather than to eat. Languages are difficult.
それにしても、スクオッシュと言う言葉は私にとってややこしい。それまでスクオッシュとはスポーツのスクオッシュかイギリスの炭酸の入ったジュースのことだった。スクオッシュがかぼちゃ等ウリ科の野菜を意味するとは知らなかった。たくさんの種類のスクオッシュがあり、殆どのものは食べられ健康に良い野菜。アメリカでパンプキンと言うと、食べ物と言うより、ジャックオランタンを作る為のかぼちゃを主に指しているようです。言葉は難しい。

Alaska 2 - Cooking with Chef MyD
My enjoyment being with MyD is being able to cook together. I particularly like to observe his way of cooking, so neat, no hurry and exact but cooked quickly.
幸いにもMyDは料理が好きなので一緒に楽しめる。特に、料理しているしぐさを眺めるのが楽しい。ゆっくりと丁寧にそして正確に、しかしながら案外早く料理が完成する。
Ceviche --Chef MyD's specialty.
HALIBUT CEVICHE SALAD
¾ lb. boneless halibut, cut into ¼ inch cubes
½ lb. Scallops, thinly sliced
½ lb. cooked shrimp, cut into ¼ inch pieces
½ cup freshly squeezed lime juice
4 large tomatoes
2 cups green onions, chopped (with some tops)
½ cup white wine vinegar
½ cup tomato-based chili sauce
½ cup fresh cilantro, coarsely chopped
1/3 cup olive oil
1/3 cup green salsa jalapeno
¼ cup dry white wine
1 tsp. Oregano leaves
Salt and pepper to taste

In a small deep bowl, place halibut, scallops, and lime juice. Mix well. Cover and chill at least 3 hours and the fish has turned an opaque white. Stir occasionally. Drain and discard liquid. Peel and core 4 large tomatoes and cut in half; squeeze out juice and seeds and chop pulp. Mix tomato, halibut, scallops, and shrimp with remaining ingredients. Cover and chill at least 2 hours.
Drain fish and serve with lime wedges

Now here is the difference from Down River Dave. I use the plastic containers of lime juice, but considerably more than ½ cup. I put in enough lime juice to completely cover all the halibut and scallops and then let it “cook” overnight in the fridge. I then mix all the remaining ingredients in a separate bowl and put them in the fridge overnight. A small amount of balsamic vinegar won’t hurt anything. Whenever I am ready, I drain the halibut and scallops and then mix them with the other bowl. I do not drain the end product. Rather I serve with a slotted spoon. If stirred once a day, this will remain safe, and good to eat for more than two weeks. Enjoy!
Banana Bread from Chef MyD's cook book
A ...1 cups all-purpose flour, 2/3 cup sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda,1/4 teaspopon salt
B ... 1 cup mashed ripe banana, 1/3 cup butter, 2 tablespoons milk C ... 2 eggs, 3/4 all-purpose flour.
1/4 cup chopped nus
Oven 350 degree fahrenheit
In a large mixer bowl combine A. Add B. Beat with an electric mixer on low speed till blended, then on high speed for 2 minutes. Add C, beat till blended. Stir in nuts.
Pour batter into a greesed 8x4x2-inch loaf ban. Bake in a 350 degree fahreinheit oven for for 55 to 60 min. or till a toothpick inserted near the center comes out clean. Cool for 10 min. on a wire rack. Remove from the pan: cool thoroughly on a wire rack. Wrap and store overnight before slicing. Makes 1 loaf (16 servings).

1 can hot enchilada sauce, 1 can mild enchilada sauce
Crumbledcooked halibut, 8 oz.cream cheese
Sliced black olives, diced green chillies
Thinly sliced green onions, Grated Monterey Jack Cheese,
Flour tortillas
Mix the two sauces together, heat to blend, then cool slightly. Dip tortilla in souces, then add halibut, cream cheese, olives, chilies, and onions (in that order). Rool up, place in 13x9 baking dish buttered or sprayed. Slice each rolled-up tortilla in 2 pieces. Cover with any leftover sauce and then sprinkle with Montereay Jack Cheese. Bake uncovered 20 min. at 350.
Note: This recipe has no quantities listed--just decie how many tortillas you are going to make and wing it. For the cream cheese, just pinch off small chunks of the cream cheese and drop it on top of the halibut.

American Homemade Banana Cake
This is NLD's recipe. MyD and I baked it and turned out very good. The cake is placed on a beautiful potpad which was made by Nlda. It is a Christmas Present, a very special present for me. Thank you!
Banana Cake
* 1 1/2 cup sugar 1/2 cup butter 2 eggs 3 ripe bananas
cream-mix these ingredients together until smooth
* In another bowl mix 2 cups flour 2 tsp baking powder 1/4 tsp salt
* In another bowl mix 1/2 cup sour (buttermilk)" milk 1 tsp soda
"Buttermilk can be make sour milk by mixing plain milk with 1 Tbs vinegar
Mix banana mixture and flour mixture together gradually adding milk mixture to them
At the last add 1 tsp vanilla. 1 cup chopped walnuts (if you like).
Bake at 350f for 45 minutes
私の大好きなアメリカ人の妹のレシピです。彼女流の作り方で日本で作ってみましたが、難しいのは同じ材料が手に入らないこと。それと、量がもう一つクリアでないこと。アメリカの計量スプーンはもちろん持っているけどtspってtea spoonの略なのか、table spoonの略なのか、いざつくり始めたら判らなくなった。2回目はMyDと一緒に作ってうまく行った。写真が2度目の作品だが、下に敷いているなべ敷きは、彼女の手作りのキルトです。私にクリスマスプレゼントとして作ってくれたものだそうです。
Banana Cake
* 砂糖1 1/2 カップ(375cc) バター1/2カップ(125cc) 卵2個 完熟したバナナ3本
全材料をクリーム状になるまで混ぜる。
* 小麦粉カップ2(アメリカの1カップは250cc) ベーキングパウダー小さじ2 塩小さじ1/4を
ボールにいれ混ぜる。
* バターミルク1/2 (なければ牛乳に大匙1杯の酢を入れて作る) 炭酸小さじ1
バナナミックスと粉を良く混ぜ、バターミルクを少しずつたらして混ぜる。最後にバニラを小さじ1混ぜ、好みでくるみの砕いたものを入れる。 170度で45分焼く。(オーブンの種類によってもっと短くても良い)

Fruit Salada

Dice available fresh and canned fruits and mix with Popy Seed dressing. According to former pilots, Popy Seed dreessing will bring a positive result in a drug test.

季節の果物や缶詰の果物をさいの目に切って、ポピーシードドレッシングで和えるだけ。(ポピーシードドレッシングは日本では手に入り難い。が、内容物は、オイル、砂糖、水、玉葱、ポピーの種、粉ワサビ等。日本で入手できるクリームドレッシングなどでも代用可能。元パイロットの話では、このポピーシードドレッシングを使ったサラダを食べた後で、ドラッグテストをすると引っかかるとのこと。

Tamale Pie

D's American Family Recipe
1 Lb. Hamberger (grinded beaf)
1 Cup Chopped Onion (250 cc)
1/2 to 1 Cup Bell Pepper diced
3.8 oz Can Sliced Black Olives
Small Can Sweet Corn
15 to 29 oz Tomato Sauce
Garlic smashed or diced per your taste
1 Package Chili or Taco Seasoning
4 to 8 oz Shredded Chedar Cheese
1 Box Corn Bread Mix
Extra Corm Meal on Standby
Start cooking hamberger. When 1/2 done, add Bell Pepper.
When 3/4 done add onion.
When Done, drain off any excess liquid.
Transfer all to a larger container.
Add tomato sauce, olives, corn, garlic, and seasoning.
When everythin is heated add the cheese.
When cheese has melted, check texture.
If the mix appears too runny, stir in corn meal to thicken.
Pour finished mix into baking dish.
Pour cornbread batter over the top.
Spread evenly and into corners.
Bake at 350 degree Farenheit till topping is golden brrown.
Toothpick cornes out dry.
Approxmiately 35 to 40 min.
